Description
A quick, one-pan weeknight dinner featuring lean ground turkey and sweet potatoes seasoned with warm spices. This protein-packed meal is ready in 15 minutes and offers a hearty, flavorful alternative to standard chicken recipes.
Ingredients
- 1 pound (450g) 93% lean ground turkey
- 2 medium sweet potatoes (about 1.5 lbs / 700g), peeled and diced into ½-inch cubes
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 medium red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ cup (120ml) low-sodium chicken broth
- 1 tablespoon tomato paste
- ½ teaspoon ground coriander
- ¼ cup fresh cilantro, chopped
- Lime wedges, for serving
- Salt and black pepper to taste
- Optional toppings: Greek yogurt, shredded cheese, or avocado
Instructions
- Prep ingredients: Peel and dice sweet potatoes into ½-inch cubes. Dice the onion and bell pepper. Mince the garlic.
- Brown the turkey: Heat a large 12-inch skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon. Cook for 4-5 minutes until browned and no longer pink. Drain excess grease if necessary.
- Sauté veggies: Add diced onion and bell pepper to the skillet with the turkey. Cook for 2-3 minutes until onions soften. Add minced garlic and cook for 30 seconds until fragrant.
- Add spices and potatoes: Stir in diced sweet potatoes, cumin, smoked paprika, chili powder, and ground coriander. Cook for 1-2 minutes, stirring constantly, until spices are toasted.
- Simmer: Pour in chicken broth and stir in tomato paste. Bring to a simmer, then reduce heat to medium-low. Cover and cook for 5-7 minutes until sweet potatoes are tender when pierced with a fork.
- Finish and serve: Remove from heat. Taste and adjust salt and pepper. Garnish with fresh cilantro and serve with lime wedges. Add optional toppings like Greek yogurt or cheese if desired.
Notes
Dice sweet potatoes uniformly (½-inch) to ensure even cooking. Do not crowd the pan; cook in batches if necessary to ensure the turkey browns rather than steams. Use low-sodium broth to control salt levels. Toasting the spices before adding liquid enhances flavor. This dish does not freeze well as sweet potatoes may become mushy; store leftovers in the fridge for up to 4 days.
