Description
A quick and easy weeknight meal featuring rotisserie chicken and canned pineapple tossed in a sweet and smoky BBQ glaze, grilled to perfection.

- 2 large rotisserie chickens (about 3–4 cups shredded meat)
- 1 large can (20–24 oz) pineapple chunks in 100% juice
- 12–16 wooden or metal skewers
- 1 cup BBQ sauce
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 medium red onion, cut into chunks (optional)
- 1 large green bell pepper, cut into squares (optional)
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat grill to medium-high heat (approx. 400°F).
- In a small bowl, whisk together BBQ sauce, brown sugar, apple cider vinegar, Worcestershire sauce, and garlic powder to create the glaze.
- Toss the shredded or cubed chicken with about half of the glaze until coated.
- Thread the chicken onto skewers, alternating with pineapple chunks and optional onion/pepper pieces. Do not pack too tightly.
- Oil the grill grates well to prevent sticking.
- Place skewers on the grill, close the lid, and cook for 5 minutes.
- Flip skewers, brush with remaining glaze, and cook for another 5-7 minutes, flipping once or twice, until chicken is heated through and pineapple is caramelized.
- Remove from grill and let rest for a few minutes before serving.
Notes
If using wooden skewers, soaking them is non-negotiable to prevent burning. Pat canned pineapple dry before skewering to ensure proper charring. The chicken is already cooked, so you are primarily warming it up and getting grill marks. Avoid overcrowding the grill to prevent steaming.
