  • 2 cups (300g) cauliflower rice (frozen or fresh)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons gluten-free taco seasoning mix
  • 1/2 cup (120ml) plain unsweetened tomato sauce
  • 1/4 cup (60ml) low-sodium beef broth
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 1/2 cup fresh cilantro, chopped
  • 2 limes, cut into wedges

Instructions

  1. Prep ingredients: Dice onion, mince garlic, measure taco seasoning, and grate cheese.
  2. Heat a large 12-inch skillet over medium-high heat. Add ground beef and break into small crumbles with a spatula. Cook until no longer pink and liquid has evaporated (8-10 minutes). Drain excess fat if desired.
  3. Push beef to one side or make a well in the center. Add diced onion and cook for 2 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in taco seasoning, tomato sauce, and beef broth. Mix well, scraping up browned bits from the bottom of the pan. Simmer for 1-2 minutes.
  5. Add cauliflower rice to the skillet and stir to coat evenly. Cover and steam for 3-4 minutes. Remove lid and cook for another 2-3 minutes, stirring occasionally, until tender but not mushy.
  6. Turn off heat. Sprinkle shredded cheddar cheese over the top. Cover for 1 minute to melt cheese, then stir gently.
  7. Top with fresh cilantro and serve immediately with lime wedges.

Notes

Ensure taco seasoning is certified gluten-free as some brands use wheat flour as a thickener. For best melting results, grate cheese from a block rather than using pre-shredded cheese. If using fresh cauliflower rice, reduce cooking time by 1-2 minutes. To prevent mushiness, ensure excess fat is drained from beef and cook cauliflower uncovered for the final minutes to evaporate moisture.
