Ingredients
- 2 cups (200g) blanched almond flour
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) packed brown sugar
- ¼ cup (50g) granulated sugar
- 1 large egg, room temperature
- 1 extra egg yolk
- 1 teaspoon vanilla extract
- ½ teaspoon xanthan gum
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (170g) dark chocolate chips
- Flaky sea salt, optional for topping
Instructions
- Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- In a medium bowl, whisk together the almond flour, xanthan gum, baking soda, and salt until evenly combined.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
- Add the egg, extra egg yolk, and vanilla extract to the butter mixture and beat until smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring by hand until just combined. Do not overmix.
- Fold in the chocolate chips with a spatula.
- Scoop dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-14 minutes until edges are lightly golden and centers look slightly soft.
- Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
- Sprinkle with flaky sea salt if desired and serve warm.
Notes
Almond flour is dense; measure by fluffing it with a spoon and leveling off, or use a kitchen scale for accuracy. Do not use melted butter, as softened butter creates chewier cookies. If you don’t have xanthan gum, substitute with 1 tablespoon of tapioca starch or arrowroot powder. Store cookies in an airtight container with a slice of bread to keep them soft for up to 5 days.
