  • ½ teaspoon xanthan gum
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (170g) dark chocolate chips
  • Flaky sea salt, optional for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the almond flour, xanthan gum, baking soda, and salt until evenly combined.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
  4. Add the egg, extra egg yolk, and vanilla extract to the butter mixture and beat until smooth and creamy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring by hand until just combined. Do not overmix.
  6. Fold in the chocolate chips with a spatula.
  7. Scoop dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-14 minutes until edges are lightly golden and centers look slightly soft.
  9. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
  10. Sprinkle with flaky sea salt if desired and serve warm.

Notes

Almond flour is dense; measure by fluffing it with a spoon and leveling off, or use a kitchen scale for accuracy. Do not use melted butter, as softened butter creates chewier cookies. If you don’t have xanthan gum, substitute with 1 tablespoon of tapioca starch or arrowroot powder. Store cookies in an airtight container with a slice of bread to keep them soft for up to 5 days.
