Description
Crispy on the outside and tender on the inside, these garlic parmesan roasted sweet potato wedges are a cheap, kid-approved side dish that comes together in under 40 minutes with just five simple ingredients.
Ingredients
- 3 large sweet potatoes (about 2 lbs / 900g), peeled and cut into wedges
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ½ cup freshly grated parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper (optional)
- 1 teaspoon dried parsley (optional, for garnish)
- ½ teaspoon red pepper flakes (optional, for heat)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease lightly with olive oil.
- Wash and peel sweet potatoes. Cut them in half lengthwise, then into 3 or 4 wedges, aiming for uniform size (about ½-inch thick).
- Place wedges in a large mixing bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss well to coat evenly.
- Spread wedges in a single layer on the baking sheet, ensuring they are not touching.
- Roast for 15 minutes.
- Remove pan from oven. Sprinkle minced garlic evenly over wedges and flip each wedge over.
- Return to oven and roast for another 10-15 minutes until fork-tender and edges are crispy.
- In the last 2 minutes of cooking, sprinkle grated parmesan cheese over the wedges until melted and slightly golden.
- Remove from oven and let cool for 2-3 minutes to allow cheese to set. Garnish with parsley if desired and serve immediately.
Notes
Do not crowd the pan; use two pans if necessary to ensure wedges roast rather than steam. Add garlic halfway through cooking to prevent burning. Grate your own parmesan cheese for better melting. For air fryer instructions, cook at 380°F for 12-15 minutes, adding garlic and cheese in the last 3-4 minutes.
