A quick and easy weeknight dinner featuring salmon fillets topped with a crispy, savory crust made from Parmesan cheese, panko breadcrumbs, and garlic. Ready in just 20 minutes under the broiler.

- 4 salmon fillets (about 6oz each / 680g)
- 1 tablespoon neutral oil (e.g., avocado or light olive oil)
- ½ cup freshly grated Parmesan cheese (50g)
- ½ cup panko breadcrumbs (40g)
- 4 cloves garlic, minced (about 2 tablespoons)
- 2 tablespoons unsalted butter, melted (30g)
- 1 teaspoon Dijon mustard
- 1 tablespoon dried parsley or fresh dill (optional)
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat the oven’s broiler to high and let it heat up for at least 5 minutes. Line a broiler-safe skillet or baking sheet with aluminum foil and lightly spray with cooking spray or brush with oil.
- Pat the salmon fillets dry with paper towels to ensure the crust sticks. Season both sides lightly with salt and pepper. Place fillets on the prepared pan, skin-side down.
- In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, minced garlic, and dried parsley (if using). Mix well.
- Pour the melted butter into the breadcrumb mixture and stir until it resembles wet sand.
- Brush the top of each salmon fillet with a thin layer of Dijon mustard.
- Press the breadcrumb mixture firmly onto the mustard-coated side of each fillet, patting it down to adhere.
- Place the pan under the broiler, about 4-6 inches from the heat source. Cook for 10-12 minutes, watching closely, until the crust is golden brown and crispy and the salmon is opaque and flakes easily.
- Remove from the oven and let rest for 2 minutes. Squeeze fresh lemon juice over the top and serve immediately.
Notes
Pat the salmon dry thoroughly to prevent the crust from sliding off. Do not skip preheating the broiler. Watch the garlic closely as it can burn quickly under high heat. For a dairy-free version, substitute butter with olive oil and Parmesan with nutritional yeast. For gluten-free, use gluten-free panko.
