  • 1.5 pounds sirloin or ribeye steak (about 1-inch thick)
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 68 cloves garlic, minced
  • 1 tablespoon olive oil or avocado oil
  • ½ cup low-sodium chicken broth
  • ¼ cup dry white wine (like Sauvignon Blanc)
  • ½ teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat the steak and shrimp dry with paper towels. Season the steak generously with salt and pepper on both sides. Mince the garlic and chop the parsley.
  2. Heat a large cast-iron skillet or stainless steel pan over medium-high heat. Add the oil and let it get hot until it shimmers.
  3. Place the steak in the pan. Do not touch it for 3-4 minutes to develop a brown crust. Flip and cook for another 3-4 minutes for medium-rare (internal temp 130°F). Remove steak to a plate and tent with foil.
  4. In the same pan, add a little more oil if needed. Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove shrimp to the plate with the steak.
  5. Reduce heat to medium. Add the butter to the pan. Once melted, add the minced garlic and red pepper flakes. Stir constantly for 1 minute without letting the garlic brown.
  6. Pour in the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute to reduce slightly.
  7. Add the chicken broth to the pan and stir to combine. Return the steak and shrimp to the pan. Spoon the sauce over everything and let it heat through for 30 seconds.
  8. Slice the steak against the grain into thin strips. Arrange steak and shrimp on a platter, pour remaining sauce over top, and garnish with fresh parsley.

Notes

Pat meat dry before cooking to ensure a good sear. Do not overcrowd the pan when cooking shrimp. Always slice steak against the grain for tenderness. For a glossier sauce, swirl in a tablespoon of cold butter at the end. This recipe is naturally gluten-free but check broth and wine labels. Can be made dairy-free by substituting butter with olive oil.
