- 4 tablespoons (60g) unsalted butter
- 6–8 cloves garlic, minced (about 3 tablespoons)
- ¼ cup (60ml) low-sodium soy sauce
- 1 tablespoon (15ml) toasted sesame oil
- ½ cup (120ml) low-sodium chicken broth
- 1 tablespoon (15g) brown sugar
- 2 cups (300g) cooked chicken, diced (or tofu/shrimp for variations)
- 4 large eggs
- 4 stalks green onions, sliced
- 1 teaspoon red pepper flakes
- ½ cup fresh cilantro, chopped
- 1 cup shredded carrots
Instructions
- Prep components: Dice chicken, mince garlic, slice green onions, and separate ramen blocks.
- Cook noodles: Boil salted water and cook ramen blocks for 1-2 minutes less than package directions (al dente). Drain, rinse with cold water, and toss with a tiny bit of sesame oil.
- Make sauce: In a large skillet over medium heat, melt butter. Add garlic and cook for 1 minute until fragrant. Add soy sauce, sesame oil, brown sugar, and chicken broth. Simmer for 1-2 minutes until slightly thickened.
- Combine: Add drained noodles to the skillet with the sauce. Toss with tongs to coat. Add cooked chicken or hardy vegetables and toss to warm through.
- Cook eggs: Fry eggs sunny-side up or soft-boil them separately.
- Portion: Divide noodles and chicken among four containers. Top with carrots, cilantro, and an egg. Sprinkle with green onions and red pepper flakes.
- Cool and Store: Let cool slightly before sealing containers. Refrigerate for up to 4 days.
Notes
Undercook noodles by 1-2 minutes to prevent mushiness upon reheating. Let sauce cool slightly before mixing with noodles to avoid overcooking. Add a splash of water when microwaving to rehydrate noodles. Store toppings like fresh greens separately if preferred to prevent sogginess.
