  • 1 cup (200g) granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ¼ cup (20g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ½ cup chocolate chunks

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Grease the parchment lightly.
  2. In a microwave-safe bowl, combine the dark chocolate and butter. Microwave in 30-second intervals, stirring in between, until smooth. Let cool slightly.
  3. In a large mixing bowl, whisk the eggs and granulated sugar vigorously for 2-3 minutes until pale, thick, and frothy.
  4. Pour the melted chocolate and butter mixture into the egg mixture. Add vanilla extract and whisk gently until just combined.
  5. Add the flour, cocoa powder, baking powder, and salt. Gently fold in with a spatula until no streaks of flour remain. Do not overmix.
  6. Fold in optional nuts or chocolate chunks if using.
  7. Pour batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs clinging to it.
  9. Cool completely in the pan on a wire rack for at least 30 minutes before slicing.

For the best crackly top, whisk the eggs and sugar vigorously until pale and thick. Do not overbake; the toothpick should have moist crumbs, not be clean. Cool completely before slicing to ensure the structure sets. For gluten-free, swap all-purpose flour for a 1:1 gluten-free blend.
