Rich, no-bake chocolate peanut butter bars that are stable for transport, easy to make, and perfect for tailgating or game day parties.

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 12 ounces semi-sweet chocolate chips
- 1/3 cup heavy cream
- 1 tablespoon butter
- Crushed peanuts (optional)
Instructions
- Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the long sides, and place in the fridge.
- In a large mixing bowl, combine softened butter, creamy peanut butter, powdered sugar, vanilla, and salt. Beat on medium speed until smooth and creamy (2-3 minutes).
- Spread the peanut butter mixture evenly into the chilled pan. Return to the fridge for at least 30 minutes until firm.
- Place chocolate chips in a microwave-safe bowl. Heat heavy cream for 30-45 seconds until hot but not boiling. Pour hot cream over chocolate chips and let sit for 2 minutes.
- Add 1 tablespoon of butter to the chocolate mixture. Stir slowly with a spatula until smooth, glossy, and shiny.
- Pour the warm ganache over the chilled peanut butter filling. Spread evenly to the edges and sprinkle with crushed peanuts if desired.
- Refrigerate for at least 2 hours or overnight until the chocolate is fully hardened.
- Lift the block out of the pan using the parchment sling. Cut into 12 or 16 squares using a sharp knife.
Notes
Do not use natural peanut butter as the oil separation prevents the bars from setting. Ensure the filling is rock hard before pouring the chocolate to prevent mixing. Store in the refrigerator for up to 5 days or freeze for up to 2 months.
