Football Tailgate Buffalo Chicken Dip: Best Game Day Recipe

  • Author: Olivia
  • Total Time: 35 minutes
  • Yield: 8 servings 1x

Description

A creamy, tangy buffalo chicken dip loaded with real rotisserie chicken and topped with an extra crispy layer of sharp cheddar and parmesan cheese. Perfect for game day tailgating and stays warm in cold weather.

Ingredients

Scale
  • 2 cups shredded rotisserie chicken (about 450g)
  • 8 oz cream cheese, softened to room temperature
  • ½ cup Frank’s RedHot Classic buffalo hot sauce
  • ½ cup full-fat ranch dressing
  • 3 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons parmesan cheese, grated
  • 1 tablespoon butter, melted (optional, for brushing top)

Instructions

  1. Preheat oven to 375°F (190°C) and position the rack in the upper third.
  2. In a large bowl, combine softened cream cheese, buffalo hot sauce, ranch dressing, and minced garlic. Mix until smooth and lump-free.
  3. Fold in the shredded rotisserie chicken until evenly coated.
  4. Spread the mixture evenly into a 9×9 inch baking dish.
  5. Bake for 20 minutes until the edges are bubbling and the center is hot.
  6. Remove from oven and sprinkle shredded cheddar and parmesan cheese evenly over the top.
  7. Drizzle melted butter over the cheese if using.
  8. Broil for 2-3 minutes, watching closely, until the cheese is melted, golden brown, and crispy.
  9. Let cool for 5 minutes before serving to allow the dip to set slightly.
  10. Serve warm with pretzel bites, baguette slices, or sturdy crackers.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not skip the broiling step for the crispy texture. If the dip is too spicy, add more ranch or a splash of milk. If too tangy, add a pinch of sugar. This dip does not freeze well due to dairy separation; store leftovers in the fridge for up to 3 days.
