Description

Ingredients

  • 4 large Russet potatoes (about 2 lbs / 900g)
  • 2 tablespoons vegetable oil, olive oil, or avocado oil
  • 1 teaspoon garlic powder
  • Sea salt and black pepper to taste
  • 810 slices thick-cut bacon
  • 2 cups sharp cheddar cheese, freshly shredded
  • 34 stalks green onions, thinly sliced
  • 1 cup full-fat sour cream
  • 2 tablespoons fresh chives, finely chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder

Instructions

  1. Wash potatoes and poke them with a fork. Grill whole potatoes over medium heat for 45-60 minutes until tender. Let cool for 10 minutes.
  2. Slice potatoes in half lengthwise. Scoop out the insides, leaving about 1/4 inch of potato attached to the skin. Brush insides with oil and season with salt, pepper, and garlic powder.
  3. Grill potato skins cut-side up over indirect heat for 5-7 minutes until edges are crisp and charred. Transfer to a foil-lined baking sheet.
  4. Cook bacon strips on the grill over medium heat for 5-7 minutes per side until crispy. Chop into small pieces.
  5. Whisk together sour cream, chopped chives, lemon juice, 1/2 teaspoon garlic powder, salt, and pepper. Set aside.
  6. Sprinkle shredded cheddar cheese over the grilled potato skins. Return to grill over indirect heat for 2-3 minutes until cheese is melted and bubbly.
  7. Top with chopped bacon and green onions. Serve immediately with a dollop of chive sour cream.

Notes

Use Russet potatoes for the best texture. Shred your own cheese for better melting. Grill skins over indirect heat to prevent burning. Do not freeze leftovers as texture suffers. Reheat in oven at 350°F to restore crispiness.
