- ¼ cup (60ml) vegetable oil
- 2 large eggs, room temperature
- ½ cup (120ml) water
- ½ cup (128g) creamy peanut butter
- ¼ cup (57g) unsalted butter, softened
- 1 ½ cups (180g) powdered sugar, sifted
- 1–2 tablespoons whole milk
- ½ teaspoon salt
- ¼ cup (45g) mini chocolate chips (optional)
- ¼ cup (30g) pretzel crumbles (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
- In a large bowl, combine brownie mix, water, oil, and eggs. Mix according to box directions until well combined.
- Pour batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick inserted in the center comes out with moist crumbs attached.
- Let brownies cool completely in the pan on a wire rack. This is crucial to prevent the frosting from melting.
- Once cool, lift brownies out of the pan and cut into 24 uniform squares.
- In a medium bowl, beat softened butter and powdered sugar until combined. Increase speed and beat for 2 minutes until fluffy.
- Add peanut butter, milk, and salt. Beat until smooth and creamy. Adjust consistency with more milk or sugar if needed.
- Dollop and spread frosting onto each brownie square. Sprinkle with mini chocolate chips or pretzel crumbles if desired.
- Refrigerate for at least 30 minutes to set the frosting before serving.
Notes
Ensure brownies are completely cool before frosting to prevent melting. Use creamy peanut butter rather than natural varieties for better frosting stability. Sifting powdered sugar ensures a smooth texture. These can be made ahead; bake brownies a day in advance and frost before serving.
