Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until no lumps remain.
  2. In a medium bowl, whisk the buttermilk, eggs, melted butter, vanilla extract, and lemon zest until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter should remain lumpy; do not overmix.
  4. Gently fold in the blueberries, ensuring not to crush them.
  5. Let the batter rest for 10 minutes to allow the flour to hydrate.
  6. Heat a non-stick skillet or griddle over medium heat. Test readiness by flicking water drops onto the surface; they should sizzle and dance.
  7. Lightly grease the pan with butter or oil. Pour about ¼ cup of batter per pancake.
