A homemade pumpkin spice latte featuring a rich, scratch-made pumpkin syrup with real pumpkin and spices, offering better flavor and control over sugar compared to commercial versions.

- 1 cup (240g) 100% pure pumpkin puree
- 1 cup (240ml) water
- ½ cup (100g) light brown sugar
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- 1 tsp vanilla extract
- ¼ tsp salt
- 1–2 cups strong coffee
- 1 cup (240ml) milk (whole, oat, or almond)
- Whipped cream (optional)
- Cinnamon for garnish
Instructions
- In a small saucepan, combine water, brown sugar, and spices. Stir over medium heat until sugar is completely dissolved (2-3 minutes).
- Reduce heat to low. Add pumpkin puree and salt. Whisk vigorously until the mixture is smooth and uniform, with no lumps (2-3 minutes).
- Let the mixture simmer gently for 5-7 minutes until it thickens slightly and coats the back of a spoon. Do not boil hard. Remove from heat.
- Stir in vanilla extract. Let the syrup cool for 5 minutes, then pour into a storage jar.
- Brew strong coffee using your preferred method.
- Heat milk in a small saucepan over medium heat until steaming (approx. 150°F/65°C). Froth using a handheld frother, whisk, or by shaking in a jar.
- Pour hot coffee into a mug. Add 2-3 tablespoons of homemade pumpkin syrup and stir to combine.
- Pour the hot, frothed milk over the coffee. Spoon foam on top.
- Garnish with whipped cream and a dusting of cinnamon. Serve immediately.
Notes
The syrup makes enough for 8-10 lattes. Store in an airtight glass jar in the fridge for up to 2 weeks, or freeze in ice cube trays for up to 3 months. Ensure you use pure pumpkin puree, not pumpkin pie filling. Adjust sweetness by reducing brown sugar or using maple syrup.
