These easy, 5-ingredient fall maple pecan sticky buns are warm, sweet, and deeply comforting. Made with a quick-bread style dough, they require no yeast and are ready in under an hour, making them perfect for weekend brunches or lazy mornings.
Ingredients
- 2 cups (250g) all-purpose flour
- 1 tablespoon baking powder
- ¾ cup (180ml) milk (whole, 2%, or almond)
- 4 tablespoons (55g) butter, melted (for dough)
- 1 teaspoon vanilla extract
- ½ cup (120ml) pure maple syrup
- 4 tablespoons (55g) butter (for caramel)
- 1 cup (100g) pecan halves
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Scatter pecan halves evenly across the bottom of a 9×13 inch baking dish.
- In a small saucepan, combine 4 tablespoons butter and maple syrup. Heat over medium heat, stirring constantly, until melted and bubbling gently.
- Pour the hot caramel mixture over the pecans in the baking dish, tilting to coat the bottom evenly. Set aside.
- In a mixing bowl, whisk together flour and baking powder.
- In a separate bowl, mix melted butter (4 tablespoons), milk, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir with a wooden spoon until a soft, slightly sticky dough forms. Do not overmix.
- Turn dough onto a lightly floured surface and roll into a rectangle about ½ inch thick.
- Roll the dough into a log from the long side. Cut into 9 equal pieces using a sharp knife or dental floss.
- Place each piece, cut-side down, into the prepared baking dish, fitting them snugly together.
- Bake for 25-30 minutes until tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove from oven and let cool in the pan for 10 minutes.
- Run a knife around the edges, place a large serving plate upside down over the dish, and flip in one swift motion.
- Lift off the baking dish and serve warm.
Notes
Toast pecans in a dry skillet for 2-3 minutes before adding to syrup for better flavor and crunch. Do not skip the 10-minute cooling period before flipping, or the caramel will be too runny. For make-ahead options, shape the buns and refrigerate overnight, then bake in the morning after letting them sit at room temperature for 20 minutes.
