A cozy, one-pan weeknight dinner featuring crispy, bone-in chicken thighs glazed with sweet maple syrup and tangy Dijon mustard, roasted alongside tender delicata squash and onions.

- 3 to 4 pounds bone-in, skin-on chicken thighs
- 1/2 cup pure maple syrup
- 3 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- Kosher salt and coarse black pepper
- 2 medium delicata squash (about 2 pounds)
- 1 large yellow onion, sliced into wedges
- Optional: Brussels sprouts or sweet potatoes
Instructions
- Preheat oven to 400°F (200°C). Line a large half-sheet pan with parchment paper or foil.
- Wash delicata squash and slice crosswise into 1/2-inch thick half-moon slices, removing seeds. Slice onion into wedges.
- Toss squash and onion with 1 tablespoon olive oil, salt, and pepper. Spread on one side of the sheet pan.
- Pat chicken thighs dry with paper towels to ensure crispy skin. Place skin-side up on the other side of the pan, leaving space between pieces. Season generously with salt and pepper.
- In a small bowl, whisk together maple syrup, Dijon mustard, remaining olive oil, minced garlic, and thyme.
- Brush chicken thighs generously with the glaze. Roast for 25 minutes.
- Remove pan from oven. Brush chicken with remaining glaze and toss squash/onions. Return to oven and roast for another 10-15 minutes, until chicken reaches 165°F internally and squash is tender.
- Let chicken rest for 5 minutes before serving. Spoon pan juices over the top.
Notes
Patting the chicken dry is crucial for crispy skin. Do not crowd the pan, or the chicken will steam instead of roast. Use real maple syrup, not pancake syrup, for best flavor and caramelization. The delicata squash skin is edible and does not need to be peeled.
