- 8 oz (225g) soft Brie cheese, rind on
- 2 tablespoons (30ml) heavy cream, cold
- 2 tablespoons (30ml) mild honey (e.g., clover or wildflower)
- 1 teaspoon (2g) ground cinnamon
- a pinch (0.5g) nutmeg
- 1 box (approx. 200g) crackers (water or seeded)
- 2 medium fresh apples (Honeycrisp or Fuji), sliced
- ½ cup (60g) dried fruit (apricots, figs, or cranberries)
- ½ cup (60g) nuts (walnuts or pecans, toasted)
- Optional: Prosciutto, salami, or leftover roasted chicken
Instructions
- Take the brie out of the package and let it sit at room temperature for 30 minutes to soften. Optionally score the top in a crosshatch pattern.
- Place the softened brie in a small bowl. Add heavy cream, honey, cinnamon, and nutmeg.
- Using an electric hand mixer, beat on medium speed for 1-2 minutes until the mixture is fluffy, spreadable, and holds its shape. Adjust consistency with more cream or cheese if needed.
- Place a large platter or board in front of you. Place the bowl of whipped brie in the center as the anchor.
- Arrange crackers in piles around the edge of the board.
- Fan apple slices next to the crackers.
- Tuck dried fruit and toasted nuts into the empty spaces.
- If using meat, drape prosciutto loosely over crackers or fold into nests.
- Fill any remaining gaps with small items like olives or grapes for an abundant, rustic look.
- Drizzle extra honey over the whipped brie and sprinkle with a pinch of cinnamon. Garnish with fresh rosemary or thyme if desired.
Notes
Ensure the brie is at room temperature before whipping for the best texture. Toast nuts in a dry pan for 3 minutes to enhance flavor. Slice apples just before serving or toss with lemon juice to prevent browning. The whipped brie can be made up to 24 hours in advance and stored in the fridge.
