Description
These extra-crispy smashed potatoes are the perfect holiday side dish, offering a golden, lacy crunch on the outside and fluffy interior. Made with Yukon Gold potatoes, olive oil, garlic, and Parmesan, they are easy to prepare and incredibly flavorful.
Ingredients
- 2 pounds small Yukon Gold potatoes
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- ½ cup freshly grated Parmesan cheese
- Sea salt and black pepper to taste
- 1 tablespoon salt (for boiling water)
Instructions
- Wash potatoes thoroughly (do not peel). Place in a large pot and cover with cold water by an inch. Add 1 tablespoon of salt.
- Bring water to a boil, then reduce to a simmer. Cook for 20-25 minutes until potatoes are fork-tender. Drain and let cool for 5 minutes.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place a warm potato on the baking sheet and smash it flat to about ½ inch thick using the bottom of a heavy glass or mason jar. Arrange in a single layer with space between them.
- Drizzle olive oil generously over the potatoes. Sprinkle with minced garlic, chopped rosemary, salt, and pepper. Gently toss to coat evenly.
- Bake for 20-25 minutes until golden brown and crispy. Check at 15 minutes; broil for 2-3 minutes if needed for extra crispiness.
- Remove from oven and immediately sprinkle with grated Parmesan cheese. Let sit for 1 minute before serving.
Notes
Do not skip salting the boiling water as it seasons the potatoes from the inside. Ensure potatoes are dry before smashing to maximize crispiness. Do not crowd the pan; use two sheets if necessary. Garlic burns easily, so mixing it with oil helps protect it. These do not freeze well due to texture changes.
