Description
An easy, 5-ingredient slow cooker buffalo chicken dip that is extra creamy and perfect for game day. Simply dump ingredients into the slow cooker for a hands-off, crowd-pleasing appetizer.
Ingredients
Scale
- 3 cups cooked chicken, shredded (about 450g)
- 8 ounces cream cheese, softened and cut into cubes
- 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
- 1/2 cup full-fat ranch dressing
- 1 1/2 cups shredded sharp cheddar cheese
- 3–4 green onions, sliced (optional, for garnish)
Instructions
- Cut the cream cheese into 1-inch cubes to ensure even melting.
- Place the cubed cream cheese, shredded chicken, buffalo wing sauce, and ranch dressing into a 3-6 quart slow cooker.
- Stir gently to combine. The mixture may look lumpy at this stage.
- Cover and cook on LOW for 2 hours. Do not cook on HIGH.
- Stir the dip well after 2 hours. If lumps remain, cook for another 30 minutes on LOW.
- Stir in the shredded cheddar cheese until fully melted and the dip is glossy and smooth.
- If the dip is too thick, add a splash of milk or extra ranch. If too thin, cook uncovered for 15 minutes.
- Sprinkle with sliced green onions and serve immediately with tortilla chips, celery, or carrots.
Notes
Cutting the cream cheese into cubes is crucial for a smooth texture. Stir the dip every 30 minutes to prevent sticking. For a spicier version, add jalapeños or use a hotter wing sauce. This dip does not freeze well due to the dairy content; store leftovers in the refrigerator for up to 3 days.
