Description
These easy tailgate pulled pork sliders feature slow-braised pork shoulder tossed in a tangy vinegar sauce, served on toasted brioche buns with a crisp, tangy Carolina slaw. Perfect for game day parties and feeding a crowd.

- 3–4 lbs pork shoulder (butt)
- 12 oz beer (lager or light ale) or apple cider
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup apple cider vinegar (divided)
- 1/2 head green cabbage, shredded
- 1/4 head red cabbage, shredded
- 2 medium carrots, grated
- 1/4 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon sugar
- Melted butter (for brushing buns)

Instructions
- Pat the pork shoulder dry and mix brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the pork.
- Place the seasoned pork in a slow cooker. Pour beer (or apple cider) and 1/4 cup apple cider vinegar over the meat. Cook on low for 8 hours or high for 4-5 hours until fork-tender.
- While the pork cooks, combine shredded green and red cabbage and grated carrots in a large bowl.
- In a small jar, shake together mayonnaise, remaining 1/4 cup apple cider vinegar, mustard, sugar, and a pinch of salt and pepper. Pour dressing over cabbage and toss to coat. Refrigerate until ready to serve.
- Remove pork from cooker and shred using two forks. Discard large fat pieces. Return shredded pork to the cooker and stir in 1/2 cup of cooking juices.
- Slice brioche buns in half horizontally. Brush cut sides with melted butter and broil for 1-2 minutes until golden brown.
- Assemble sliders by placing pulled pork on the bottom bun, topping with slaw, and adding the top bun. Serve immediately.
Notes
The pork can be made up to three days in advance. The slaw tastes better if made the day before. Do not freeze the slaw as the mayo will separate. For a spicy version, add jalapeño to the slaw or hot sauce to the pork.
