- 2 large eggs, room temperature

- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 8 ounces (225g) dark chocolate bars (60-70% cacao), chopped into chunks
- Flaky sea salt (such as Maldon), for sprinkling
Instructions
- Preheat oven to 350°F (175°C). Line two half-sheet baking pans with parchment paper.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar on medium-high speed for 2-3 minutes until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and scrape down the sides of the bowl.
- In a separate medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture on low speed. Mix just until the flour disappears (about 30-45 seconds). Do not overmix.
- Fold in the chopped chocolate chunks using a spatula. Reserve about 20% of the chocolate to press onto the tops of the cookies later.
- Scoop dough into balls (about 2 tablespoons each) and place on prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-14 minutes. The edges should be set and slightly golden, but the centers should still look soft and underdone.
- Immediately after removing from the oven, sprinkle each cookie with a pinch of flaky sea salt.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

For best results, ensure butter is softened but not melted. Spoon and level flour for accurate measurements. Cookies can be frozen as dough balls for up to 3 months. Store baked cookies in an airtight container with a slice of bread to maintain softness.
