  • 1/2 cup (115g) refined coconut oil, melted
  • 1 cup (200g) dark brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (170g) dark chocolate chunks
  • 1/2 cup toasted pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides, and lightly grease with coconut oil.
  2. In a large bowl, whisk melted coconut oil, brown sugar, and granulated sugar vigorously for 1-2 minutes until glossy and emulsified.
  3. Add eggs and vanilla extract, whisking until smooth and uniform. Scrape down the sides of the bowl.
  4. Sift flour, baking powder, and salt into the wet mixture. Fold gently with a spatula until just combined; do not overmix.
  5. Fold in dark chocolate chunks (and toasted nuts if using) until evenly distributed.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes until edges are golden brown but the center still looks slightly underbaked.
  8. Check with a toothpick; it should come out with moist crumbs, not wet batter.
  9. Cool in the pan on a wire rack for at least 10 minutes, then lift out using parchment overhang.
  10. Cool completely before slicing into squares.

Notes

Use refined coconut oil for a neutral flavor. Ensure eggs are at room temperature to prevent the coconut oil from solidifying. Do not overbake, as blondies continue to cook in the pan. Cool completely before cutting to ensure they hold their shape.
