  • ½ teaspoon onion powder
  • 2 tablespoons fresh parsley, chopped
  • Optional: ½ cup shredded cheddar cheese
  • Optional: ¼ cup crumbled bacon
  • Optional: Fresh chives

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash potatoes thoroughly (no need to peel) and cut into uniform 1-inch cubes.
  3. Spread potato cubes on paper towels or a clean kitchen towel and pat them completely dry to remove surface moisture.
  4. Place dried potatoes in a large mixing bowl. Drizzle with oil and sprinkle with seasoning salt, garlic powder, paprika, and onion powder.
  5. Toss potatoes with hands until every cube is evenly coated in oil and spices.
  6. Line a large baking sheet with parchment paper (optional) or leave bare for extra crispiness.
  7. Spread potatoes in a single layer on the baking sheet, ensuring they are not crowded.
  8. Roast for 25-30 minutes. At the 15-minute mark, flip the potatoes to ensure even browning.
  9. Remove from oven. If using cheese, sprinkle it on and return to oven for 1-2 minutes to melt.
  10. Sprinkle with fresh parsley or chives. Taste and add more salt if needed. Serve immediately.

Notes

Do not crowd the pan; potatoes need space to breathe to crisp up. Ensure potatoes are thoroughly dried before oiling to prevent steaming. If adding cheese, add it in the last 2 minutes to prevent burning. These reheat best in an oven or air fryer to restore crispiness.
