Description
A quick and easy weeknight dinner featuring pork tenderloin coated in a shatteringly crisp garlic, herb, and panko breadcrumb crust. It’s juicy, flavorful, and ready in under 35 minutes.
Ingredients
Scale
- 1 to 1.5 pounds pork tenderloin (2 tenderloins of similar size)
- 2 tablespoons yellow mustard
- Coarse salt and black pepper
- 1 cup panko breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, leaves stripped
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 1/4 teaspoon red pepper flakes (optional)
- Lemon wedges, for serving
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, optionally place a wire rack on top.
- Pat the pork tenderloins dry with paper towels to ensure the crust sticks. Trim any silver skin.
- Season the pork generously with salt and pepper on all sides.
- Brush the entire surface of the pork with yellow mustard.
- In a small bowl, combine panko breadcrumbs, parsley, rosemary, garlic, Parmesan, garlic powder, and red pepper flakes.
- Drizzle with olive oil and mix with fingers until crumbs resemble wet sand.
- Press the breadcrumb mixture firmly onto the mustard-coated pork, ensuring an even, thick layer.
- Place coated tenderloins on the prepared baking sheet or wire rack.
- Bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from oven and let rest for 5 minutes before slicing into medallions.
- Serve with lemon wedges.
Notes
Patting the pork dry is crucial for the crust to adhere. Use a meat thermometer to ensure the pork reaches 145°F without drying out. Letting the pork rest for 5 minutes redistributes the juices. For extra crunch, toast the panko in a dry pan before mixing. If the crust softens in the fridge, re-crisp it under the broiler.
