  • Sea salt and black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 45 cloves garlic, minced
  • ½ cup sun-dried tomatoes (packed in oil), chopped
  • 1 cup heavy cream
  • ½ cup low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 3 cups fresh spinach
  • ¼ cup white wine (optional)
  • ½ cup cherry tomatoes, halved (optional)

Instructions

  1. Pat salmon fillets dry with paper towels and season generously with sea salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon skin-side down for 3-4 minutes until crispy, then flip and cook for another 2-3 minutes. Remove salmon from pan and set aside.
  3. Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the same pan; sauté for 1-2 minutes until fragrant. If using white wine, add it now and simmer for 1 minute to deglaze.
  4. Pour in heavy cream and chicken broth. Stir in Italian seasoning, red pepper flakes, and half of the Parmesan cheese. Simmer gently for 3-4 minutes until the sauce thickens slightly.
  5. Stir in fresh spinach and cook until wilted, about 30 seconds to 1 minute.
  6. Return salmon fillets to the pan, nestling them into the sauce. Spoon sauce over the fish and let sit for 1-2 minutes to finish cooking.
  7. Sprinkle with remaining Parmesan cheese and fresh basil if desired. Serve immediately.

Notes

Pat salmon dry before cooking for a better sear. Use fresh Parmesan rather than pre-grated to avoid grainy sauce. Remove pan from heat before adding cheese to prevent breaking. If sauce is too thick, add a splash of broth or milk.
