Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces linguine
  • 4 tablespoons unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 6 cloves garlic, minced
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1/2 cup heavy cream
  • 2 lemons (zest of 1, juice of 2)
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1 cup reserved pasta water
  • 1/4 cup Parmesan cheese, optional

Instructions

  1. Thaw frozen shrimp if necessary, then pat them completely dry with paper towels. Season with salt and pepper.
  2. Bring a large pot of salted water to a boil. Cook linguine until al dente. Reserve 1 cup of pasta water before draining.
  3. Heat olive oil and butter in a large skillet over medium heat. Add minced garlic and red pepper flakes, stirring constantly for 60-90 seconds until fragrant but not browned.
  4. Increase heat to medium-high. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove shrimp to a plate.
  5. Reduce heat to medium. Pour in white wine to deglaze the pan, scraping up browned bits. Simmer for 2 minutes.
  6. Stir in heavy cream and lemon zest. Simmer for 2-3 minutes until the sauce thickens slightly.
  7. Return shrimp and any juices to the pan. Add drained linguine and toss over low heat for 1 minute. Add pasta water as needed to adjust consistency.
  8. Stir in fresh lemon juice and parsley. Taste and adjust seasoning. Serve immediately with optional Parmesan.

Notes

Do not overcook the shrimp as they will become rubbery. Save the starchy pasta water to help emulsify the sauce. Use fresh lemon juice only; bottled juice will ruin the flavor. If using salted butter, reduce added salt. This dish is best made fresh as it does not freeze well.
