  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan lightly with butter, line the bottom with parchment paper, and wrap the outside in two layers of heavy-duty aluminum foil.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and salt. Mix until it resembles wet sand.
  3. Press the crust mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes until fragrant and slightly darkened. Let cool completely.
  4. In a large bowl, beat the room-temperature cream cheese on medium-low speed until completely smooth and creamy (2-3 minutes). Scrape down the sides and bottom.
  5. Add the sugar and sour cream to the cream cheese. Mix on low speed until just combined. Scrape the bowl again.
  6. Add the eggs one at a time, mixing on low speed just until blended after each addition. Do not overmix.

  8. Pour the batter over the cooled crust and smooth the top.
  9. Bake at 325°F (160°C) for 1 hour and 15 minutes. The edges should be set, but the center should still jiggle slightly like Jell-O.
  10. Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour to prevent cracking.
