  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar, for coating
  • 1 tablespoon ground cinnamon
  • Pinch of salt, for coating

Instructions

  1. Preheat oven to 375°F (190°C). Line two large baking sheets with parchment paper.
  2. In a small bowl, mix ½ cup sugar and 1 tablespoon cinnamon to create the coating. Set aside.
  3. In a large bowl, beat room-temperature butter and 1 cup granulated sugar on medium speed until light and fluffy (about 2 minutes).
  4. Beat in eggs one at a time, then add vanilla extract. Mix until combined.
  5. In a separate medium bowl, whisk together flour, baking soda, cream of tartar, and ½ teaspoon salt.
  6. Gradually add dry ingredients to wet ingredients on low speed. Mix just until flour disappears; do not overmix.
  7. Roll dough into 1.5-tablespoon balls and coat thoroughly in the cinnamon-sugar mixture.
  8. Place coated dough balls on prepared baking sheets, spacing them 2 inches apart.
  9. Bake for 9-11 minutes until edges are set and lightly golden, but centers still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Butter must be room temperature (soft but not melted) to prevent flat cookies. Do not overbake; centers should look slightly underdone as they firm up while cooling. For softer cookies, store with a slice of bread in an airtight container. Dough can be frozen before baking.
