  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon
  • Pinch of salt (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3 minutes.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Add the flour, baking soda, cream of tartar, and salt to the wet ingredients. Mix on low speed until just combined; do not overmix.
  5. In a small bowl, mix the coating ingredients: ½ cup granulated sugar, 1 tablespoon cinnamon, and a pinch of salt.
  6. Scoop about 1.5 tablespoons of dough, roll into a ball, and coat thoroughly in the cinnamon sugar mixture.
  7. Place dough balls on prepared baking sheets, leaving about 2 inches between them.
  8. Bake for 10-12 minutes until edges are set and lightly golden, but centers still look slightly soft.
  9. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a cooling rack to cool completely or serve warm.

Notes
