  • 3 cups (240g) old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups (340g) butterscotch chips
  • 1 ½ cups (150g) raw pecan halves
  • Extra flaky sea salt, for finishing

Instructions

  1. Preheat oven to 350°F (175°C). Spread pecan halves on a small baking sheet or skillet and toast for 5-7 minutes until fragrant. Let cool completely, then chop roughly.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy (2-3 minutes).
  3. Add eggs one at a time, beating well after each addition. Add vanilla extract and mix until combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture, mixing on low speed just until flour disappears.
  5. Fold in rolled oats, toasted pecans, and butterscotch chips until evenly distributed.
  6. Cover the bowl and refrigerate dough for at least 30 minutes (or up to 24 hours).
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop dough into 2-tablespoon balls and place 2 inches apart.
  8. Bake for 12-14 minutes until edges are golden brown but centers look slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack. Sprinkle with flaky sea salt while warm.

Notes
