  • 1 teaspoon baking soda

  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup (100g) granulated sugar, for coating

Instructions

  1. In a large bowl, beat the room-temperature butter, dark brown sugar, and granulated sugar together on medium-high speed for 3-4 minutes until light and fluffy. Scrape down the sides of the bowl.
  2. Add the egg and vanilla extract. Beat on medium speed until combined.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes, or up to 24 hours.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Scoop the dough into 1.5-tablespoon balls and roll each ball in granulated sugar until fully coated.
  8. Place dough balls on baking sheets, spacing them 2 inches apart.
