  • 1 loaf white bread or Texas toast (about 1620 slices, cut into 1-inch cubes)
  • 810 large eggs
  • 1 cup whole milk
  • 2 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried mustard
  • Salt and black pepper to taste
  • Optional: 1 cup diced bell peppers, 2 tablespoons fresh chives, hot sauce

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat a large skillet over medium heat. Cook the sausage until browned and no longer pink (8-10 minutes). Add diced onion and cook until soft and translucent (3-4 minutes). Drain excess grease and set aside.
  3. Place bread cubes into a 9×13 inch baking dish, spreading them into an even layer.
  4. In a large mixing bowl, whisk eggs, milk, dried mustard, salt, and pepper vigorously until uniform and frothy.
  5. Pour the egg mixture evenly over the bread cubes. Press down gently with a spatula to ensure all bread is soaked.
  6. Sprinkle the cooked sausage and onion mixture over the bread, followed by half of the shredded cheese.
  7. Cover and refrigerate for up to 12 hours (optional but recommended), or let sit on the counter for 15-20 minutes.
  8. Bake for 35-40 minutes, or until the top is golden brown and the center is set. If browning too fast, cover loosely with foil.
  9. Let rest for 10 minutes before cutting and serving. Top with remaining cheese or fresh chives if desired.

Notes

Use day-old bread to prevent mushiness. Drain grease from sausage to avoid a soggy casserole. Whisk eggs thoroughly for a smooth texture. Can be frozen after baking for up to 2 months.
