  • 1 cup plain dry breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon mustard
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 10 or 12-inch cast iron skillet with aluminum foil, leaving an overhang, and lightly grease with oil or cooking spray.
  2. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, mustard, and paprika. Set aside.
  3. In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, Worcestershire sauce, mustard, salt, and pepper. Mix gently with a fork until just combined; do not overmix.
  4. Transfer the meat mixture to the prepared skillet and press into an oval or rectangular shape, about 1 inch thick.
  5. Bake for 35 minutes.
  6. Remove skillet from oven and brush the glaze evenly over the top and sides of the meatloaf. Return to oven and bake for another 10-15 minutes.
  7. Check that the internal temperature reaches 160°F (71°C). Remove from oven and let rest for 10 minutes before slicing.

Notes

Do not overmix the meat to avoid a tough texture. Line the skillet with foil for easy cleanup as the sugar glaze can caramelize and stick. Rest the meatloaf for 10 minutes before slicing to retain juices. For ground turkey, add extra milk or oil and cook to 165°F.
