Instructions

  1. Pat pork chops dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 15 minutes.
  2. Heat neutral oil in a large skillet (preferably cast iron) over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown and internal temperature reaches 145°F. Remove to a plate and tent with foil.
