- 2 tablespoons neutral oil (avocado or vegetable)
- 4 tablespoons unsalted butter
- 12–15 fresh sage leaves
- 3 cloves garlic, minced
- 1/2 cup chicken broth (low-sodium)
- 1 teaspoon Dijon mustard
- Kosher salt and freshly cracked black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Pat pork chops dry with paper towels and season generously on both sides with salt and pepper.
- Heat neutral oil in a cast iron or heavy skillet over medium-high heat. Sear chops for 3-4 minutes per side until golden brown. Remove to a plate and tent with foil.
- Reduce heat to medium. Add butter to the same skillet and swirl until it melts, foams, and turns golden brown with a nutty aroma (2-3 minutes).
- Add sage leaves, garlic, and red pepper flakes to the brown butter. Stir constantly for 30 seconds until sage crisps and garlic is fragrant.
- Pour in chicken broth and Dijon mustard, scraping up browned bits from the bottom of the pan. Simmer for 1-2 minutes until sauce reduces slightly.
- Return pork chops to the pan, spooning sauce over the top. Let sit for 1 minute to reheat.
- Serve immediately, drizzling with the brown butter sage sauce.
Notes
Ensure pork chops are at room temperature before cooking for even searing. Watch the butter closely as it burns easily; it is ready when it smells like toasted nuts. Pork is safe to eat at 145°F (63°C), so pull from heat at 140°F (60°C) to allow for carryover cooking. Do not crowd the pan when searing to ensure a good crust.
