A quick, budget-friendly, and flavorful side dish featuring grilled corn brushed with a smoky chipotle mayo sauce and topped with cheese and cilantro.

- 8–10 ears of corn, shucked
- 2 tablespoons vegetable oil or melted butter
- 2–3 chipotle peppers in adobo sauce, minced
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon fresh lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 cup feta or Cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- Red pepper flakes (optional)
Instructions
- In a small bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, cumin, and salt until smooth.
- Stir in the minced chipotle peppers and 1-2 teaspoons of adobo sauce. Taste and adjust seasoning if needed.
- If using fresh corn, shuck and rinse ears, then pat dry. If using frozen, thaw completely and pat very dry.
- Brush each ear of corn lightly with vegetable oil or melted butter.
- Preheat grill to medium-high heat (approx. 400°F).
- Place corn directly on grates and grill for 10-12 minutes, turning every 2-3 minutes until charred and tender.
- Transfer hot corn to a platter and brush generously with the chipotle mayo sauce.
- Sprinkle with crumbled feta or Cotija cheese, fresh cilantro, and a squeeze of lime juice.
- Serve immediately while warm.
Notes
For best results, use room temperature mayo and sour cream to ensure the sauce mixes smoothly. If the sauce is too spicy, add more mayo or sour cream. Corn tastes best hot off the grill; do not sauce it until right before serving.
