- 1 pound ground beef (80/20 lean-to-fat ratio)
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt

- 12 large flour tortillas (10-inch)
- 2 cups red enchilada sauce
- 3 cups shredded Mexican cheese blend
- 1 cup shredded cheddar cheese
- 1 can black beans, drained and rinsed (optional)
- 2 stalks green onions, sliced (for garnish)
- Sour cream (for serving)
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Dice the onion and mince the garlic. Measure out spices.
- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until no pink remains (6-8 minutes). Drain excess grease, leaving about 1 tablespoon.
- Add diced onion to the beef and cook for 2-3 minutes until softened.
- Add garlic, cumin, chili powder, salt, and pepper. Stir well and cook for 1 minute until fragrant. Remove from heat.
- Stack tortillas and microwave for 30-60 seconds wrapped in a damp paper towel to make them pliable.
- Pour 1/2 cup of enchilada sauce into the bottom of a 9×13 inch baking dish and spread evenly.
- Place a warmed tortilla flat. Spoon 1/2 cup of beef mixture down the center, add 2-3 tablespoons of Mexican cheese blend, then roll tightly. Place seam-side down in the dish.
- Repeat with remaining tortillas, filling, and cheese, arranging them snugly side-by-side.
- Pour remaining enchilada sauce over the rolled tortillas, ensuring sauce gets between rolls.
- Sprinkle remaining Mexican cheese and cheddar cheese on top.
- Cover dish with aluminum foil and bake for 15 minutes.
- Remove foil and bake for another 10 minutes until cheese is bubbly and slightly browned. Optionally broil for 1-2 minutes for a crispy top.
- Let rest for 5 minutes before serving.
- Garnish with green onions, cilantro, and sour cream.
Notes
Warm tortillas in the microwave with a damp paper towel to prevent tearing. Do not overfill tortillas to avoid bursting. Let enchiladas rest for 5 minutes after baking to help them set. Can be made ahead and refrigerated for up to 24 hours before baking.
