- 2 cups (250g) All-Purpose Flour
- 2 teaspoons Baking Powder
- ½ teaspoon Salt
- ¼ cup (57g) Unsalted Butter, melted
- ½ cup (100g) Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
- ½ cup (120ml) Buttermilk
- ½ cup (100g) Granulated Sugar (for coating)
- 1 tablespoon Ground Cinnamon
- 2 tablespoons Unsalted Butter, melted (for coating)
Instructions
- Preheat oven to 350°F (175°C). Line a 24-cup mini muffin tin with liners or grease thoroughly with non-stick spray.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate large bowl, whisk the melted butter, sugar, egg, vanilla, and buttermilk until smooth.
- Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined. Do not overmix.
- Scoop batter into the mini muffin cups, filling each about ¾ full.
- Bake for 10-12 minutes until golden brown and a toothpick inserted comes out clean.
- While donuts bake, mix the coating sugar and cinnamon in a shallow bowl. Melt the 2 tablespoons of butter for the coating.
- As soon as donuts are done, let them cool in the pan for 1 minute. Transfer to a rack or plate.
- While still warm, brush or dip the tops in melted butter, then immediately roll in the cinnamon sugar mixture to coat.
- Serve warm.
Notes
Do not overmix the batter to ensure tender donuts. The coating must be applied while the donuts are still warm for the sugar to stick. For gluten-free, use a 1:1 GF flour blend. For dairy-free, substitute butter with coconut oil and buttermilk with oat milk plus vinegar.
