Apple Harvest Caramel Blondies: Easy Fall Dessert

  • Author: Olivia
  • Total Time: 45-50 minutes
  • Yield: 16 servings 1x

Description

Chewy, rich blondies loaded with tart Granny Smith apples, toasted walnuts, and a gooey caramel swirl. This easy fall dessert is perfect for potlucks or cozy afternoons.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 medium Granny Smith apples, diced into ½ inch cubes
  • 1 cup walnuts, chopped and toasted
  • 1 teaspoon ground cinnamon
  • 1 cup caramel sauce
  • Flaky sea salt, for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper for easy removal.
  2. Spread chopped walnuts on a baking sheet and toast in the oven for 5-7 minutes until fragrant. Let cool completely.
  3. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  4. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  5. Add flour, baking powder, and salt to the wet mixture. Mix gently with a spatula until just combined; do not overmix.
  6. Fold in diced apples and toasted walnuts gently to distribute evenly.
  7. Spread batter evenly into the prepared pan.
  8. Drop spoonfuls of caramel sauce over the batter and swirl gently with a knife to create ribbons.
  9. Bake for 30-35 minutes until edges pull away from the pan and a toothpick inserted in the center comes out with moist crumbs.
  10. Cool in the pan for at least 30 minutes before lifting out and slicing into squares. Dust with flaky sea salt if desired.

Notes

Toast walnuts for better flavor. Use tart apples like Granny Smith to prevent mushiness. Do not overbake as blondies continue to cook in the pan. Store in an airtight container at room temperature for up to 4 days or refrigerate for up to a week. Can be frozen for up to 3 months.
